- 1 cup fresh Pumpkin (mashed)
- 1 Egg
- 1 cup Flour
- 1 tsp Baking Powder
- 1 tsp Curry Powder
- 1/2 tsp Salt
- 3-4 cups Vegetable oil
- Yogurt sauce:
- 16 oz vanilla yogurt
- 1/4 cup brown sugar
This is a pretty new recipe for me, but they are great and they were very well recieved.
Very easy to make and very tasty…even cold
They are a nice option for the holiday season… I hope you enjoy them…
In a large bowl mix pumpkin, egg and flour.
Mix in the baking powder, curry powder and salt.
Refrigerate for 1 hour
Heat oil in a deep pan till water dripped in it sizzles.
Drop batter into hot oil 1 tbsp at a time.
Fry till crispy on the outside, then remove with slotted spoon and place on paper towels to drain.
Sever with yogurt sauce. (mix yogurt and brown sugar. drizzle on fritters and put some in a bowl for dipping)
