• Pasta:
  • 2 pds large Elbows
  • 8 quarts Water
  • 1/2 tsp Fresh Pepper (ground)
  • 1/2 tsp Sea Salt (ground)
  • 2 tbsp Vegetable Oil
  • Cheese Sauce:
  • 1 stick Butter
  • 1/2 pd Swiss Cheese Cheese (shredded)
  • 1 pd Colby Jack Cheese (shredded)
  • 1 pd Sharp Cheddar Cheese (shredded)
  • 24 oz Evaporated Milk
  • 4 tbsp Flour
  • 1/4 tsp Sea Salt (ground)
  • 1/2 tsp Fresh Pepper (ground)



This is a recipe from a friend of mine. He does not cook much, but his baked Mac and cheese is fantastic and definitely worth sharing.

I do have to warn you though…it is addictive :-)

Baked Mac and Cheese

Preheat oven to 350 degrees

Macaroni:

Place Water in a 12-14 quart pot.

Add 1/2 tsp pepper, 1/2 tsp salt and vegetable oil.

Bring water to a boil

Add Pasta and cook for 8-10 minutes

Drain pasta and place in a very large bowl.

Cheese Sauce:

While pasta is cooking, make the cheese sauce.

Melt butter in a large frying/saute pan.

Add flour, salt and pepper and stir till the flour disolves.

Add the evaporated milk and cook for 5-10 minutes until is starts to slow boil.

Add in the cheeses 1 handful at a time and stir till all the cheese melts.

Continue to add cheese until it has all been added and melted into the mix.

Add the cheese sauce to the bowl with the pasta and mix well.

Place in a large lightly greased baking dish.

Place in oven for 20 minutes.

Next place it in the broiler for 5-10 minutes until it is lightly crisped on the surface.

Dish into plates and serve.
